Step 2: create a new plugin folder, be sure it includes a data and images folder
Step 3 (dirty): copy the existing maps.txt and images into the plugin, in the respective folders
Step 3 (clean): create a new maps.txt, a new galaxy within that maps.txt, and upload copy the photo you want to be your background into its expected location
Step 4: open endless sky editor
Step 5: File > Open > the maps.txt you want
Step 6: edit your map.

It doesn't seem to have worked, though. Or maybe edits to the map.txt don't take effect in an existing game, and you need to either start a new one and/or copy the new stuff from map.txt to the save file?
Either way, I think I bollocksed something up royally, since the descriptions for all the outfits are showing twice. Does having a new outfits.txt in a plugins file conflict with the stock plugins file?
Generally speaking, as long as you are opening up the files and checking them in notepad++ you should be fine.
