You only get to experience the game for the first time once, playing it on normal now will taint the higher difficulties later, because knowing the game already will make everything much easier.
Emily makes the most sense for a first or only playthrough from a story standpoint, and she gives you new toys to play with, compared to what you're already familiar with from Corvo.
