You can't destroy mountains. Part of the game is planning your base layout so it goes around the mountains.
If you place a mine on a hillside, then attach a windmill or such to it, you can slize of a piece of mountain.
With some work you can remove a entire mountain like this, BUT you bots will have issues there, since they think it`s still mountain.

1: There are large portions of the maps where you won't be able to reach just because there's a mountain or hill in the way.
This leads to wasted space, and possibly having to make a new base if you get a small area.
2: The dev's couldn't somehow have found a way to allow building on elevated terrain, which would have added to the base building aspect, and would look really cool.
This also would add to the space conservation issues that the game is plagued with due to bad building placements, and the fact that the build system is terrible...
3: Aside from the above listed issues, if you build small structures, you have no option later to build larger structures over them to replace them...
Honestly there are many issues with the game that stem from these two issues alone.
I'll go make a feedback post now.
A proposal would be to have demolishable points on the map, whereby instead of outright removing a whole mountain, you can remove a small section predetermined by the devs.
The majority of said mountain would still exist, but you can now fully utilize that cutoff land.
I know on my stream world, I have a large portion of buildable terrain I can't physically get to, because the girth of the mountain is too big, which obviously limits the amount of potential I have for building, and not in a good way.
