also, what level are you? ghouls are very hard to kill without a decent weapon and armor, ie, early in the game.
I'm level 12, hunter armor, leather helmet, Golden sword (30 Blade damage)
D u think I should level and try again? or just try harder?

Yes it's the tunnel to the east coast.By using the Nautilus Transformation I got this easily done. Will I be able fighting 'em when I try to return?
What helped me a lot was leveling up through alchemy. Collect every plant you see and never sell any plant, except for using them in quests. Then use your skill points to reach alchemy level 3. After reaching alchemy level 3 I created 14 potions that granted me 5 permanent strength points each. You need a certain plant to do so. I don't know the English name because I am playing the German version but I guess you know what plant I mean. You also need a recipe to do that but there are a few points in the game where you either find the recipe in a chest or can buy it.
You can use the same strategy if you concentrate on bow fighting, except that you create permanent dexterity potions instead of strength potions. It is also useful for increasing the permanent health level. I have stopped increasing my strength at 101 points.
By the way, I now have a sword with damage 70. Self made obsidian sword! ;-) You need forge level 3 to do that and obsidian and gold. Train mining with the treasure hunter Olf as early as possible to collect as much ore as possible. Again - don't sell anything!
The only things I trade are duplicate weapons, duplicate tools or weapons weaker than my own weapon. Everything else stays in my inventory. You never know when you need it.
One more thing. After reaching sword fighting level 7 you suddenly will notice that you can not find any character willing to train you further. This is because most sword fight teachers only teach until level 7. The only person who can bring you to level 10 is Fincher in the bandits hideout.

If you follow the different quests you can also find a b a s t a r d sword with 55 hit points. It actually looks better than the obsidian sword but unfortunately it has less hit points.
Ogres I find doable (compared to some other enemies!) as long as I have space. Powerattack, doge backwards two times, rinse and repeat till ogre is dead. I have more trouble with Ghuls then Ogres (I guess most enemies are like a puzzle, once you figure out their patterns they become a whole lot easier). The Dodging backwards part is key, using a shield is all but useless against them.
When fighting ghuls I slowly approach the enemy holding my shield. Once the ghul finished its attack sequence I counter attack. Ghuls need a little more time than other enemies to recover from counter attacks and in many cases you can simply keep clashing on it until its dead. It is important to mention that if you are using a sword and you have reached a certain level of swordsmanship (level 4 or 5 I think) you can significantly increase the speed of your attack sequence. To do so you have to press the attack button at the right moment. Try this without enemy to figure out the right moment and get a feeling for it.
If the agressive slashing tactic does not work it is also possible to keep moving backwards after each attack. Ghuls tend to crouch and release a blue (magical?) explosion. You have to watch the Ghul. If you see it crouching you can either attack quickly or move back quickly. I prefer to attack.
But I think Minfredus is still a little to weak for Ghuls. It might be best to skip them and play other quests until you are stronger or have better equipment.
What's the plants name in German? I'm from Germany too ;)
Shields are extremely useful, but against Ogres I found them of limited utility. Against the final enemy race I wouldn't try without a shield.
