You can get the sneaking skill for free by going behind the guard house in Harbour Town and digging up a treasure chest that contains a Ring of Stealth. You can wear the ring to give yourself the sneak skill, and take it off when you are done thieving.
Gut animals is not worth it in my opinion. I actually did a calculation on this years ago; gut animals only earns a maximum of around 3000 gold over the entire game (that is assuming you kill and gut nearly every animal on the island), and most of that is obtained during chapters three and four when you don't really need gold any more.
If you get the sneak skill ring and use it to thoroughly loot Harbour Town and the monastery, that should give you enough gold to buy whatever skills and equipment you need.
However I do not usually bother with smithing if I am using any other weapon besides swords.
