There is never a point in the game where you cannot progress due to a lack of knives. Worst case, you'll just have to put your stealth skills to the test until you reach the next box.
You never know what you'll find hidden around ;)
PS: Throwing darts work too.
Also, something I didn't realize on my first playthrough, but the crystals in the vault--yes each and every one--can be used as a weapon.
Not sure about the rumble support specifically. I'm also on the Vive myself.
