All that seemed to work is shortcutting \steamapps\common\ShareX\ShareX\ShareX.exe.
Small issue. Frustrating as hell. The cursory glances I've seen from the Steam discussions (including that one stupid "....................FIX NOW!" melvin) seem to be that Steam doesn't like when apps try to run stealthily.
It's just Steam being Steam (being bad and out-of-touch with users). Make do and mend.
Hello, I'm the Develeoper of DSX on steam, there's a good way to make an app not show up as in-game status, you can contact me on discord Paliverse#4820 and i can share with how i accomplished it. I update my app on steam just like you so were in the same situation

All of my tests come from executing the shortcut added through Steam's "Add Desktop Shortcut" function. This shortcut is added to my Windows Start-up folder (the one which executes its contents at session-start).
Immediately upon launching, my Friends List announced that I was running ShareX. It disappeared after roughly 12 seconds (after which, I was just "online").
This is due to the last-saved state of the "While ShareX is open, show "In-App" in Steam" box being unchecked.
Upon checking the box and restarting the app, my in-app status persisted as expected.
I'll come back here if the behaviour becomes unexpected (Steam stops respecting the "don't show me as in-app" choice again).

I realised I should have uninstalled and reinstalled the app to keep the test sanitary. I've done this. I haven't added the modified launcher yet, but the In-App checkbox is checked (as by default, I suspect), but I'm not showing as In-App.
Does the "show me as In-App" option start off uninitialised regardless of the checkbox?

Flipping the In-App checkbox a bunch of times (restarting ShareX each time) has resumed the expected behaviour.
(Un)fortunately, turning the checkbox off has caused the intended behaviour. I have not added the modified launcher again yet. I'm not sure how useful my data will be, considering that Steam has apparently decided to respect the UI choice now. I'll continue using the modified Launcher for now.
Uninstalling from Steam does not delete your application settings.
So you can uninstall ShareX from Steam, and install it as a regular program, I used this link...

Then I told it not to install any shortcuts, but launch when Windows starts.
Everything works the same as before automatically, since it automatically directs itself to the same settings folders that the Steam version used.
Edit: Also should note, using this method your Steam status will not show "ShareX" or "in-app", it will simply say "online", or whatever your default status is, and when you play a game it will show that game as usual. Steam will no longer be linked to your ShareX app in any way.
I downloaded the new ShareX_Launcher.exe and replaced it with the old one in the Steam folder and it seems to fix the problem. I have been using the new .exe for about 24 hours and so far Steam has not shown me that I am "playing ShareX".
