What is the command for giving yourself ammo?

easy as f*ck. First type sv_cheats 1 and then type givecurrentammo. Then the ammo you have will go up (if it is a custom weapon it will go to 9999 i think)

when I fire it just instantly replaces the amount and it is stuck at 500 in the mag

just rebind the key in the options menu, you would be looking for "primary fire" bind it to left click.

is there a way i can do a type of givecurrentammo command that gives me alternate ammo? (eg. smg grenades)

Just use impulse 101 in console, it will give you all ammo for all weapons. If you want to see a little bonus, use impulse 103.
