It looks to be an addon doing that, you'll have to find which addon it is.
You can test that by adding -noworkshop to your startup parameters

find the watermelon texture in the materials folder and delete it. After that, go to gmon in the steam library and right click it. Go to local files and click verify game cache.

I had ph_youturd and that's where the melon situation came from, I uninstalled it and it got back to normal, does disabling the map work too?

this post is literally 4 years old
my problem was from a prop reskin mod that i no longer use and i havent had this problem since
and yes im pretty sure if you disable the map from the addons page in game it should fix the issue without needing to uninstall it

may i ask, did you randomly find it or was there some way of finding it?

here's what i did: i reinstalled gmod, and as i was waiting for all the mods to install, the melon was normal. now that they all were downloaded, it got broken again, i turned off all mods, and at first, the melon is invisible, and if you break the invis melon it has normal chunks, but after some time, it just made me spawn the old broken melons with the broken chunks, not only that, it also broke my toolgun, making it invisible, i deleted css content(because the issue started as soon as i got it) from the files, but clearly i was doing something wrong, because rp downtown v2 worked normally, the melon was still broken. this post was the only time i saw anyone talk about this issue, so i am very confused

i just looked at recently installed workshop mods and tried to find the issue there
eventually i found out what was causing it
