For example, I once had an addon installed that added the blood texture to the spy's shoulders and chest like in the Meet the Spy video where his head's blown up, but the addon actually replaced the default spy model itself, so all spy models I spawned were like that. This was annoying until I found the addon causing it and got rid of it. The better way to have made that would be to make a hex of the blood that could be bone merged to a regular spy model, or hex the whole blood-spy so that it was a separate ragdoll from the default one. A lot of tf2 cosmetics and weapons that aren't included in the official game are hexed so they can be used. I think there would also be a ton of addon conflicts if addons replaced models rather than hexed them.
However, sometimes someone might want to replace the default model, if for example they wanted NPCs or other items that are prespawned in a map to appear differently.
