Pinpointing cargo from the scanner can be tricky until you master the top and rear views but once you learn that trick you will pinpoint them easily, best way I find them is first click a waypoint on the White dot on top view then flip it to rear view, place the cursor smack in the centre of the waypoint marker you placed in top view and look up and down the vertical line of your cursor, you will be looking for a precise white dot on this line now click another waypoint here you now have it pinpointed. If you not sure you got it right flip back to top view and check your origoal waypoint , if it's moved or no longer centre of the White cargo dot then you picked wrongly in the rear view
edit: After a time, 10 equipment slots become insufficient and the deploy constructor will get religated to a hanger slot, right next to the fuel converter....lol.
This , I find mining with a science officer and a specific mining laser far more effective than mining probes
