Born Children vs Adopted Children
What are the advantages of one against the other? I notice a couple of children i adopted come with some pretty good statistics, which makes it worthwhile to consider if you are min/maxing in your game so to speak. I also notice that adopted children have preset names that cannot be changed.

Cost, pre-determined name. Role play reasons - Adopted child vs bloodline

I honestly am tempted to try and use the adoption feature as shock troops. Adopt 3-4 children, and when they grow up arm them. Sure you cant command them, but they are loyal to the family, and don't cost a dime. Sure they'd take awhile to grow up, but thats another element of the challenge

High-level parents are going to produce high-level offspring.

If thats true, how do you train your partner when you are not controlling it? I am at the point of the game in which i had 3 sons, and these three sons have all their partners, but if i switch them around in my party it wont let me go back.

One of the differences is in the cost of adoption and you can't choose their name. They seem to inherit roughly half the skills of the highest skill adopting parent. If you have a 11 constitution father and a 4 constitution mother and send her to adopt, you get a child who is of school age and has 4 constitution and a smattering of other skills. Which I think is the same as a regular child.

They sometimes start at school age (or 1 year under). Which means they grow up faster, but they also cost money to adopt. The advantage is you can't have natural kids past 40 in most cases. But you can adopt a child as a 100 year old walking corpse so they are unusually high skilled.

Yep, but I ended my pure bloodline.

Adopted children are great for when you're too old to bear children and the enemy dynasty just murdered off most of your line. Ideally though you want to level a bit and bestow your superior genes to babies that start off with a portion of your gained skills. It's tempting to have a baby right after marriage, but wait a few years to train your wife with the skillful art of yelling at her employees in a workshop and she'll make a better mother. Parenting is 90% goading. :P
