I'll try not to spoil anything:
Innos or Beliar is a matter of taste. Innos is the bright one and Beliar the dark one. The quests are similar. Differences are, for example that you can enter Ishtar and do quests there if you are on Beliars side, while you can enter Vengard when you're on Innos side.

Adanos is an other thing. Your on neither side but have to fight against both leaders.Unlike Innos and Beliars way no god will give you a quest. You're on Xardas side here.

Usually i go for Adanos, i take every quest from both sides (without taking a side) and go for Xardas quests as late as possible. I think overall you can do more quests this way. But sometimes it's nice to do Innos or Beliars quests too. You miss them if you go for Adanos.

For a pure mage, i would choose Beliar magic. Dark army(or something like that, i dont know english names for spells :P) can easily tank, while you cast AoE Lighting.
Innos is also good, with AoE Fire Rain/meteor, but no summoning. Instend you get healing and weapon blessing, so its good if you want to use both magic and weapons.
Adanos is mostly support magic, you get open locks, shapeshifts, freezing, sleep etc.

Remeber you can learn spells from every god, you need to choose path, just for a few strongest ones.
So, i would say choose either Beliar(pure mage), or Innos(battle mage), and learn a few spells from Adanos, like open locks(cheaper than learning lockpicking for mage) and freezing spells.

Adanos.
Becouse it is neutral god between good and evil. I think that everyone has those two elementals. :)
