With wolfes you want to start hitting them before they even see you and you do not let them bite you by hitting them all the time. With lurkers you used RMB to hit them because it keeps them further away from you, but with wolfes this does not work. They're too fast.

As for magic, it's perfect for killing from a distace if you've invested enough in it. Fireball can make huge impact if you use it right, but be warned that you can become over powered and killing will become less interesting.
My advice - use a bow, but be quick. If you fire once, the animal will race towards you. usually you can hit it atleast twice, if you're lucky, you can kill it this way without even drawing your sword.
To kill wolves with a sword, you must be strong and quick. Until you get strong enough and skilled enough, keep your distance. Kill them one by one. To do this lure them out and don't start a fight untill you're far away from other wolves.
