You should probably use a different selection of skills, and it's possible you might need a different stat allocation as well (less STR, more AGI/STM)
No matter what your build is, I would recommend to have stamina at least at half your primary attribute, if not a bit more than that.
Also early on in the beginning you do get the perk that gives you detailed info on skills if you mouseover them. Check all your skills for how much energy they use compared to the damage or effect they have. You may want to swap some high damage moves for some quick low damage moves that use less energy... and that's really okay. I won against a late game boss by just using 2 low cost attacks and the rest defensive moves and buffs to keep my energy drain low.
