No, but really, he's an eccentric and interesting character and Koei has been making this series for more than 30 years, so it's not like they are jumping on what's cool at the moment.
And by the way, Hyouge Mono is the only anime with a decent depiction of Nobunaga (the series isn't even about him), everything else pretty much just borrows his name (although Concerto was pretty fun).
But that's because of how important to his country's history he is. It's the same reason Abraham Lincoln and George Washington are so prevalent in American pop culture.

Japan had been a mess of infighting for cenuries. Rivalries both between and within major clans resulting in bloodbaths, roving bands of bandits all over the place, etc.
Oda basically looked around around, said "screw this" and proceeded to do something that nobody at the time really conceived of as being possible - conquest of the entirety of Japan. His strategies ranged from brilliant to overtly brutal, but he accomplished more in a few decades than anyone else had managed to do in centuries.
And he didn't live to see his dream fulfilled. It was just within reach, but he was betrayed by some of his men, but by that point the unification was basically complete, and the Warring States period ended.
Interestingly, his media depictions are all over the map. He's as likely to be depicted as a scheming borderline psychotic as he is to be a military genius who's doing what he has to do in order to achieve his goal and put an end to the constant warfare.
He's basically Japan's favourite historical anti-hero.

Those 3 are like the holy trinity. Hideyoshi and Ieyasu serve Nobunaga, Ieyasu serve Hideyoshi and then Ieyasu is left alone xD
