I'm not sure if shameless self-promotion is against the forum rules here, but I really do think this mod made by Gjoerulv is really worth looking into. I highly recommend it. It adds not only difficulty to the game, but some minor tweeks as well, such as boss additions, changes to status effects, stat changes to certain weapons and armor, etc. It really helps breath life back into the game.

Honestly, I could've needed it on my playthrough.
FF7 was waaaaaaaaaaaaaaay too easy when you know about the Materia system and limit breaks.
Probably one of the most easiest FF game ever.

Exactly. I mean, just look at the difference between Jenova-DEATH in-mod and out-mod. The difference is very huge in this boss fight. Unmodded, Jenny-D is almost impossible to lose to. But with the mod, you really have to be quick at commands and have a really good strategy with just a little luck.
well, I don't think a hardcore mode was necessary but... every boss/enemy should've done 25% more dmg and proably had 25% more hp - ATLEAST.

A small sidenote on this mod though. Difficulty wise, the endgame went kind of overboard. Early and mid-game is nicely balanced. Up until that point, you're almost forced to exploit the game mechanics. It feels kinda cheap.

At what point do you have to exploit the game mechanic? And what exactly do you mean by that? I just finished the Corel Train on Disk 2.

As far as i can remember, at the end of Disc 2 and onwards.
Well, maybe not exploiting. More like abusing or spamming.
For example, loads of Hero Drinks, abusing Coin materia etc. And that's to avoid for being one-shotted by the last few enemies/bosses, on my first experience.

Use loco weed that you can get from killing enemies in the area. That should hopefully confuse them. Be sure to have like 6 or 7 of them for the battle too.

I should also mention that Sega Chief on Youtube has great videos with detailed strategies for all of the boss fights in hardcore mod.

I'm not too far from that. Fixing to head to Fort Condor again with everyone around level 60.
