New Threat follows pretty much the original game, it has a crazy re-imagination and tons of great new implementations, but it follows the original game with only kinda soft hard-type mod, so you don't over level and battle keeps and interesting challenge. Most original strategies works here and if you know already the game it's enought to enjoy it.
As walkthrough? I don't know any but you can follow the gameplays from FF VII speedrunners, they explain mostly everything.
I'm currently replaying it with a lot of mods (New Threat 2.0 game type A) and as far as i can tell saving Aerith is optional in both game types A and B. Type B mainly changes chain of events IIRC.
Regarding item locations there are a ton of changes (mostly for balancing reasons) but you could just follow a regular guide because the mod comes with a documentation where you can look up the changed item and materia placements. I'm doing end game content now and as far as i know they made it so you basically can't miss important items (especially last weapons, final limit breaks or materia) except probably Bahamut Zero like in the regular game
Especially for a replay i can totally recommend using the mod, it really spices up the game nicely, the balancing is great
Were you playing it with other mods, especially the Echo-S demo? New Threat does have compatibility issues with other mods, and considering what Echo-S does, it will definitely have issues running with that.
