PC version or PS1?
I personally got my hands on an actual physical copy of Final Fantasy 7 and I also noticed that my brother has the PC version on his Steam account. I'm wondering what people's thoughts are in regards to which one would be better to play for a first playthrough?

Bear in mind, I have NEVER played Final Fantasy 7 before and have seen minimal gameplay for it or the story (aside from Aerith's fate, but let's be honest in the world of the internet that was a spoiler you can't escape from).

I've still got my old PSX discs. Gonna hang on to them just for old times sake.

I prefer to play the Steam version though. The graphics are slightly better and I just prefer to play with a keyboard.

I would never ever give away my PS1 FF discs :D but I am really glad, that I got it on Steam, because my Playstation is sleeping in a box under my bed :D

Play the PSX version first.
The PC version has bugfixes because it has introduced more when it was ported. Also keep in mind that the PSX version is the final built of the game while the PC version is based on older backuped files. When Square had decided to make the port for PC they didn't had all files anymore, because the project was closed and everything (hardware, people, ...) had moved to other projects. At last the port team of Square in Honolulu hadn't much experience with coding for PC. They used a lot tricks to make the game on PC workable which is the reason why reverse engineering for this game is somewhat of hard to do and why Dotemu couldn't make much personal fixes to the re-release albeit every fix was already made by the moding community.
Which reminds me if you decide to mod the game I highly recommend you to use the PC version, if not stay with the PSX game.

I've debated on using mods, but I feel like for a first experience I should do it without them. Also from what I've looked around you need 20+ GBs of free space just to use the mods

Because everybody is recommending Bootleg, but it's outdated years ago.
We have already an easier to install mod manger:

If you want a lightweight mod I recommend this mod too:

The game doesn't need mods. They're all janky and half baked IMO.

I would definitely play the game without mods on your first playthrough.

I have heard the PC version did not include the One Winged Angel choral vocal version audio track, is this (still) true?

I'd say play the PS1 version. I personally have the ps1 version, ps3 and pc version but the port to PC is kind of a screw up

ps1 version. pc version is messed up all to high hell. you gotta fix everything yourself. and controller support sucks. ff8 is even worse because pc version has no rumble.
