If you want a good story/experience also try FF8 (which has No Encounter ability very early from Diablos) as it has a very good story and world to experience.
I also suggest FF9 (I don't recall any ability to skip battles in this one... but if you Google some tricks you can make combat a breeze with the right strategies, or get to level 50+ at start of disc 2 easily). It has an awesome story, some great supporting cast (one of the coolest female chars in the franchise, Beatrix, who doesn't fall into any stupid cliches), and the world is really beautiful though a bit undercooked in some spots while great in others.
Legend of Dragoon is one of my all time favorite worlds to explore and stories to experience and your own party members are not immune from plot twists, death, etc. Easily the most realistic/raw story experience and world building of any video game, ever. It is a PS1 only game tho (might be able to get it on PS Now/etc.) so not on PC but it is incredible.
