learning enemy skills
so I have one enemy skill materia that's stacked up but apparently I can't learn enemy skills by casting them on myself which is some ♥♥♥♥♥♥♥♥
is there any other way to learn enemy skills that doesn't involve going around trying to relearn them from each enemy?

You have to learn them from enemies one at a time, there is no getting around that. Once you have the ability to fly around the map it doesn't take very long if you use a guide telling you where to go and what you are looking for. There are up to 4 enemy skill materia, so one thing you can do to speed up is to wait to fill them out until you have at least 3 (can't use 4 at once anyway), then equip them on one character so you are filling them out at the same time.

There really isn't any purpose in learning more than one of a given E.Skill tho because of how efficient they are. The support effects are "All" casted while the offensive ones typically are, and by the time they begin to fall off at the third disc you want to use attack commands instead while prior to that usually 1-2 cast of an E.Skill will finish a fight so one person knowing it will suffice. I recommend just saving yourself the trouble and not learning it for more than one materia.

All you really need are Mantra Magic and Beta (very early game) and then Magic Hammer, Big Guard and White Wind.

Fortunately, so long as none of the enemy skill materia have that particular skill learned, you can actually equip multiple enemy skill materia on the same character and if they get hit by the enemy skill, all of the enemy skill materia will learn that ability.

However, if you have the morph materia, you can morph enemies and get them to cast them on your party and you can learn them that way. It's also the only way to learn certain enemy skills.

Manipulate, not morph.

Oh, right. I completely forgot. My bad. But yeah, manipulating enemies successfully is still another way for enemies to cast enemy skills on your characters, including those that are normally never cast on you.

Morph is for transforming enemies into items, which is still useful in its own way.

if you really want to learn all the magic. there are a couple of good places you can go. one is the plane crash in the ocean. but the enemy are a pain. the very best place is the crater. there's an area in there that has an enemy called the magic pot the downside you have to give him an elixer to kill him but if you have the e-item materia that should be no problem. i'm not sure but i think you get 20 ap for each one. could be 10. once you learn it all you can take them to red 13's home visite the observatory and get the master materia's. the downside to that it combines several materias in their catagory. myself i would do that only once just so i could say i did it. but i would master a few of them more then once. NOR would be one. cures would be another. but that's just me. others may have other ideas.

The Magic Pots give 1000 AP each. You can use W-Item to duplicate Elixers as timpejohn45 suggested or if you don't have it the other enemies in the area have Elixers you can steal (especially if you got mega-all from the alternate path to steal from everyone at once). Do not use pre-emptive materia when farming Magic Pots as it actually can slow down your AP grind.

Zolom respawns infinitely. Only one of that monster race is killed by Sephiroth in the story.

Trine is permanently missable as it can only be learned from a Wutai side quest which can be accessed in disc 3 but cannot be repeated once finished and the mountain climb in disc 2 which cannot be accessed by that point. That means if you finished the Wutai side quest, which involves beating all five masters as Yuffie, you're out of luck.

Pandora's Box is also only cast once per save file, but the only enemies that have that skill are the Draco Zombies which are only found in the North Crater, but so long as all four enemy skill materia are equipped on your party, you're good.

Those are the only two permanently missable enemy skills in the entire game.
