Other than that, and only if we forget about modding, the PS4 has the definitive version of the game.
I also love the vanilla version of the game. I feel no need to mod in better texures to enjoy it as much as I always did.
But I can see why some people would like to have some better graphics here and there. And I also think that after playing through it so many times already, it might even be cool to give the game a few new twists to make it feel fresh.
As for what you can mod, the possibilities are immense. I mean anything from: textures, 3D models, backgrounds, soundtrack, UI, script, difficulty, FMVs, sound effects, you name it.
Basically anything you might imagine can be modded if someone has already made a mod for it.
For example, after I finish my current playthough, I'm thinking of modding the game with a difficulty Mod that makes the game harder: enemies have more health, deal more damage and the fights are overall tougher because the mod re-balances pretty much everything from enemies to item drops to the Exp and Ap you gain per battle and so on.
I will also try installing a Mod that Retranslates and Restores the whole script, so that there's no more typos, no more stupid things like "Barret, be careful! Attack while it's tail's up, it will counter attack with it's laser." and restores many dialogues that were removed, and some things that were translated so badly that don't make sense in english, like jokes being lost in translation and stuff like that.
There are people here on Steam Discussions that I'm sure can help you much more than me when it comes to mods, and that can recommend you the best ones to use.
You just have to make a a new thread and ask the same question you did here.
I know that the "7th Heaven" Mod is one of the easier ones to work with, and it basically is itself a compendium of various other mods that were made to be compatible with it. It let's you choose from a list of mods, which ones you want to install and which ones you don't.
There's also many videos online showcasing Final Fantasy VII mods in action, you can look around and see what I talked about.

Both the Steam and PS4 version have this. So it can't even be considered a Pro.

Man, this is almost as bad as those people that demand the "This guy are sick." line back in the game.
Granted, that line was an error in writing while the Change Disc Art is not, but still, those were just there for nothing more than the purpose of having a backgroung image between changing Discs, a "feature" that is obsolete since there's no need to change discs, we aren't in the CD age anymore. It literally brings nothing substantial to the game.

Another shallow feature in my honest opinion, mostly because Final Fantasy VII is a turn-based RPG, if it was an action or even a racing game I would understand the need to have some force feedback through the controller, but in a game like this? Come on... it's not like we need to feel the controller rumble every single time a character attacks or is attacked.
Everything else (textures, models, sounds, FMVs and so on) can be modded in on the PC with the Steam version.
If by chance you're not into mods, then the PS4 version stands as the definitive version of Final Fantasy VII.
Thought this was FF8 forum at first. So, the original FF7 didn't have rumble, so you can scratch that out.
The only difference I can think of to merit is that consoles have a shelf life and require monthly subscriptions to maintain being part of a service that would save your data/game. Whereas with the PC version, you can literally back up your save files yourself basically forever and for free.
So really, it's just a matter of comfort and preference and how much you play/value the game per console or PC. The achievements seem to be a bit different in the different versions, if that means anything to you.
There's no speed button on the PC version, and while it does have cloud saving, the cloud is through Square-Enix rather than through Steam, and I don't think the sync responds well all the time and seems to have some trouble with modded saves.
However, the mods that are available for the game seem to create an entirely different experience, which while tempting to me, not so much that I'd risk losing a synced save wherein I have over 300+ hours of gameplay. If I decide to do mods or edits myself, I'd just get a copy of the original PC version, install that on a separate hard drive, and mod that instead. But I mean, the whole differences thing is all a subjective matter of preference, their truly is no "better" or "worse" version, it's the same game either way.
Admittedly, some of the mods do in fact seem interesting, although, I wouldn't try them with this version. If I was going to go trying something like that, I'd look into trying to mod the Microsoft Store version, or the original disc version of the PC game. ---again, don't quote me on that, I've never tried it, just that if I was going to get into doing it, I wouldn't risk it with this version.
My argument is that the entire reason I bought the Steam version is that I trust Steam's cloud service in that even if they pull the game off the store, install files will still work for people who have previously purchased the game, and given that I've purchased both the original Playstation version (before it was a Greatest Hits) as well as the PC disc version, I wanted a single digital copy ---In short, I don't want to have to keep buying the game over and over again for the foreseeable future. It's my favorite game, but repeatedly paying for the same thing just rubs me the wrong way after one too many times.
Look into the mods before spreading what some would consider bad information.
Mods don't effect cloud save syncing at all, and you don't have to rely on that if you don't want to. You'll have no problem running saves files that rely on mods to work.
The microsoft store version IS the same version as the steam version, the only real difference is in the launchers. There is an ORIGINAL 1998 version of FF7 for PC, but you'd have to buy the old hardcopy disc set to even get your hands on that. Most of the current mods, are for the 2012/steam version. There is no reason why you would want to try the original disc version of the game, and im not sure that version would actually even work in windows 7 or later.
