I don't know how long the game will be in the end, but I have heard that there will be more content added to the remake.
There are many ways to get around whole needing of actual detailed overworld map.
Leveling can be done with either going beyond level 99 by having each episode increase it by about 100 levels.
I have a feeling it'll have multiple chapters similar to how FF7:Before Crisis & FF4 the after years was released. Also as SE like to use allusions to the numbers in their FF games, there's probably going to be 7 episodes in total.
SE stated that while it's going to be episodic, they'll make it so that each episode's plot will standout on it's own so it'll give the vibe of a standalone game.
If you ask me, most likely they're going to split each arc into their own episodes while taking a ♥♥♥♥ ton of liberties with the story.
People are speculating that the first game is only going to involve the Midgar section, and judging from what SE stated about standlone stories, it makes the most sense since that whole arc can be easily modfied into it's own story while still keeping ties to the FFVII grand plot.
Each episode it going to be worked and released seperately as if they were their own standalone games so expect this to be a very long haul.
Also, SE hasn't denied the possibility of the remake series going further than 3 episodes so... yeah.
That's pretty much accurate.
I'd expect the FF7 remake to be AT LEAST 3 games in the long haul. Square has stated that remaking a game like FF7 would be impossible (they said this in the past) so really the only way they can make the profit they want is to make multiple installments. I'm OK with that as long as it ends up being good, but given SE's history, I'm very apprehensive. However, they seem to be slowly turning things around with FFXV and KH3. Only time will tell. It will still sell well regardless...
And they can easily do a bait and switch with the remake, and set up a FF7-2 if they wanted. With all the liberties they can take with the remake (more time to focus on segments of the story as opposed to just copy and pasting the original) they can plant seeds that could culminate into a possible sequel.
It's going to happen, trust me.

I'd expect no fewer than 3 parts, possibly more, to do the game justice.
On the other hand I am almost 100% sure, that I won´t enjoy the remake. I grown old and tired of jrpg...
It's gameplay is much more action-oriented than FFVII's.
On the other hand I am sure about to hate the many cutscenes and the terribly written dialogue. I still got the nightmares from FFXIII...
