Civ II was fun as well, the thing I miss most from civ II would be the advisors, they were so funny.
(never managed to get my hand on a copy of my own though, I lend the copy of a friend back in the days, and any pirated version I found did not have the advisors on them, not sure if thats because it's pirated, or that some version of civ II do not have the funny advisors alltogether.)
Civ I I never managed to play, never found a copy I could lend or buy, nor found any pirated version I could try out. So can't give you a hint on that. Stil it's the game it started all of this, so I would be very interested getting my hands on it.
When at it, you might also try out Alpha Centaury, and Call to Power 1 and Call to Power 2.
They are of the same team, play sort of the same, but are different enough to be enjoyable.
To me Call to Power would be the best "civilization game"
With civilizations 3 right after it. (I like to build hundreds of city's, and I like to be master of all trades, something that has been made impossible in civ 4 and 5)
Civ 2, Is good too, but I'll have to admit, it plays a bit like a beta civ 3, planes for example work very differently. However those really funny advisors make a lot good, I still can't figure why they were EVER removed, they should never have been taken away!
