It's not so simple and quite simple at the same time.
Up front: A lot depends because you might be a person who clicks with a simple moving or fighting style chars have or not or maybe have different things that trigger you in terms of making you want to pick a char just by looking at/feeling/trying that char.
Anyway, my suggestion is:

Every time in those videos you notice something about a char you like, note down that char - don't matter why. Don't matter if you want to try because "offensive char with lots of strength" or "wow, armor king looks so impressive" or "what? I am a boxer myself, gotta try steve, damn!" or whatever you reasons may be - it all goes. After finishing both videos take your list of chars noted down to the lab and just fiddle around with each of those for a couple of minutes to get a feel and a hang of them.
You will find yourself narrowing the list of chars to try "out in the field" after doing that or even want to try some more in-depth stuff when trying those in the lab for a first and maybe second or third feel. If you feel the need to narrow down your list more, go for it as well as long as you feel suitable about it.
And that's actually my 2 cents on it: Make sure you feel well when making decisions in this game. You don't owe anything to anyone other than to yourself. Pick a char you want and simply give it a try. You can only learn when playing this game, sometimes more, sometimes less - but the pace and intensity is your decision after all.

This is pretty good advice even from someone with 16 hours of Tekken 7. Yes, pick a character you like in terms of game-play or appearance. If you need help deciding OP, let us know what you're looking for in terms of "newbie friendly" or if you've already found a character to play with. GLHF.
Yeah sure. If you're both looking for ease of control, stay away from the mishimas: Kazuya, Heihachi, (hardcore players), and 2Ds like Akuma, Geese, and Eliza. Also avoid stance characters like Zafina, Steve, Xiaoyu, and Hwoarang, etc.
Lucky Chloe is a decent character to start with, as she is not too hard or too difficult to play with and understand. An excellent choice for a basic introduction to back-turn and left twist stance.
Most other characters are fair game and easy to pick up. I suggest you try Lucky Chloe or play versus mode with your SO, play random and start mashing. You'll eventually find a character you both like.
