2nd. If his Reppuken still hits you when you try to step, it means you stepped too late, and just need to adjust your timing of it. If other moves still hit you, then it depends on the move, is it a tracking move? Those can't be stepped, they need to be blocked or crushed (if possible), or does it have slight tracking to one direction?
Best way to answer this is to go to practice mode, select Geese as your opponent (if you do own him), put the AI on record mode, select a move from his move list that you have issues with then let the AI do it on repeat, see on which direction you can step it, do you need to side step or side walk? Some moves can't be stepped but can be walked. If neither direction can be stepped or walked, try to see if if you can crush the move (if it's a high, duck, if it's a low, hopkick), if that can't be done either, look online for the frame data of that mvoe (unless you have the frame data DLC ofc) and look at the move's frames on block, if it's -1 up to -10, it's considered safe BUT his turn is over, you can now attack, if it's -10 or more, you can even punish it and he can't react, if it is over -16, have fun, party time, you can launch him.

Another thing you can do is download the T7 Chicken Plus app for your phone, and look at the frame data for his moves, iirc, it also has a short visual demonstration of the move, and so you can at least know what's safe or not.
