Is there like a visual cue to sidestep towards certain direction Or is it like a matchup knowledge I need to remember for each of the cast?

Mostly match-up knowlegde. Figuring out which direction the move comes and adapt without much knowledge takes some serious skill.

Match up - memorisation. Stepping on intuition alone in T7 will get you blown up unlike other 3D fighters where if it looks steppable you probably could step it.

its ok to guess but pls dont overdo it on matches that rly matter (ranked, tourneys, etc)

Move knowledge even. For beginners there is a mod which adds character weak side to their profile pic (but beware many experienced players say that it hurts in a long way, cause you sidestep moves and not characters).

You can sidestep Kazuya to the right on a read. Sure, maybe bad advice since it’s safer to sidestep left. But this shows that the sidestepping rules are not set in stone as they are laid out to be.

There's no sidestep rules. You just learn how to dodge particularly annoying moves over time.
