What's difference between Tekken 7 and Tekken 7 Original edition ?

There's a graph on the Store Page that lists the differences between the Original Edition and the Definitive Edition.

If you mean the $5.99 Tekken 7, it is the base game with no DLC at all. No DLC characters, no DLC arenas, no DLC costumes, no Tekken Bowl, and no Frame Data (which is arguably most important).

If you know about Fighting Games, you know how important Frama Data is, and the base version of the game does not offer Frame Data in Practice Mode. Also, if you buy any version of Tekken 7 without having a certain DLC character, you cannot use that character to practice against in Practice Mode. That's an important note.

I do not know how arenas work if you don't have a DLC arena but your opponent or friend does. Actually, now I'm curious as to how that would work...

The Originals Edition ($89.99) of the game gives you the Base Game, Frame Data, Eliza, Anna Williams, Lei Wulong, Craig Marduk, Armor King, Julia Chang, Zafina, Ganryu, Leroy Smith, Fahkumram, Kunimitsu, and Lidia Sobieska. This version does NOT give you any of the DLC costumes, which isn't a big deal IN MY OPINION, nor does it give you Ultimate Tekken Bowl, which also isn't that big of a deal to me. You also lose out on the arenas - Vermilion Gates, Island Paradise, Negan's arena, Geese Howard's arena, nor Noctis' arena. You don't get special character panels which is basically a character's custom portrait prior to a match, along with other special customization options. The characters that are NOT in this pack are Geese Howard (and his arena), Noctis (and his arena), and Negan (and his arena).

The Definitive Edition ($109.99) will get you all DLC characters, all arenas, all costumes, and all special customization options. This is basically the whole package.

I think the most important things to consider is Frame Data, arenas (sorry, I mean STAGES), and the characters themselves. Not being able to practice against a DLC character can really suck especially when you get obliterated by one in a match and want to know how to deal with their kits.

The costumes are whatever to me. Tekken Bowl isn't that great, imo, but I can see how it would be fun if you wanted to play with friends. And customization options aren't really that important to the experience unless you just have to have everything.

But it and Definitive are huge ripoffs.
Tekken 7 base is on sale 85% off and all the DLCs are half price right now. You would save a lot of money and get everything buying Tekken 7 and the season passes for under $50.

I thought I would disagree, but with how confusing the DLC is listed, I actually do agree. I mean, I personally would spend the money on this game again, but if I were browsing the store, I would be super confused, which would turn me off of the game.

I remember I had a friend who didn't have any of the DLC, and I was going to buy it for the guy because he wanted to practice versus certain DLC characters. I was so confused at what I needed to buy. The Season Pass explanations are confusing, and I had to find a Reddit post that listed everything nicely.

Even if you were to ask me right now what all DLC to buy to have the complete game, I don't think I'd be able to answer. Eliza isn't in any of the Season Passes, IIRC, and I don't know if Noctis is, either.

And why is Frame Data still being sold as DLC? They should have made all of this easier to understand when they came out with the Definitive Edition, and it really should be cheaper this late into the game. Or at the very least, they could have a version of the game that is $50-60 with all DLC characters, stages, and frame data but without all the extra costumes, customization options, and Tekken Bowl stuff.

It's just weird how overly complicated the devs made this. It almost seems purposefully done to make people just say, "Forget it, here's $110... just give me the whole package." That's BS, imo.

I think these digital only editions are more for the Epic and MS stores than Steam but IDK for sure.
