1.- Go to practice, put Action = CPU.
2.- In this mode, as Rabcor says, don't attack.
In fact, let go of the controller for a while. Tekken is one of the few series where you don't have to "proactively" defend. "Neutral" stops high and mid strikes, and "Down" (crouching) stops low strikes; no need to press "Back" in either case. Again, this works as long as you don't try to press "forward" or an attack button.
3.- After seeing you opponent (trying to) hit you for a while, try some fast pokes with your character. Pressing left punch once without direction works for most of them.
4.- When you feel comfortable with this, start to experiment. Increasing CPU difficulty is recommended.

You usually wanna block standing in this game, since that blocks Highs, Mediums, and Special Mediums. You only need to crouch block to block Lows (crouch block only blocks Lows though). Most damaging moves are High or Medium.
But don't forget that its not just about hitting and blocking there is a 3rd element and its evasion, you can side step or backdash out of range of some things before they would even hit you then punish them after and some moves in this game dodge certain pokes.

there are a couple of moves that punish you for not holding back while guarding.
E.G. kings 1+2, 1+2 and his d/b 3+4 4 4 4
make it a habit to hold back instead of being on neutral
As for punishing, to really get into that you'll need to know the frame data of moves and only go on the offensive if you blocked a move that's punishable (has slower recovery than a move of yours starts up in).
I dont know since I havent used any other characters, sorry.
But Im sure htere are characters like that. I wouldnt know since its my habbit to already be holding b.
I've actually been watching a lot of Aris/Avoiding the Puddle. He seems like a really rad guy that knows the game really well. I thought it was odd he wasn't mentioned more when people were looking for tutorials. Thanks for the vid :)
