You can interrupt her spam anytime. It follows a pattern:
Mid->Low->Mid->Low->Mid->Low->Mid->Low...
Optionally she can go for that cartwheel to finish it with two mids in a row, but that one is extremely telegraphed and easy to block. If she encores the cartwheel, you can punish her heavily on a whiff.
Either way, the hits for that sequence are not true combos. Even if you're hit, you have time to react before the next hit. Just adjust your stance accordingly.
Parrying the low hits open up her easily: after blocking a mid hit, press d/f (while still standing up). You'll parry her low hit and leave her vulnerable.
Chloe relies a lot on low attacks, getting used to parry is really useful if you're having trouble against her.
Infinite attack means it can be used in succesion over and over until interupted. I think in Tekken Tag 2 it even labled these type of attacks with parentheses (infinite) in the move list.
I've been pretty much only playing Chloe, and I often test to see if my opponent knows how to deal with exact that infinite move.
Some opponents punish me on my first try, others lose a bit of health or sometimes even one round but then adapt on the fly, others seem to never learn and become a free win. I kinda feel like I'm a tutorial bot when I'm doing that, designed to teach my opponent to learn to parry.
So, as a tip from a Chloe spammer: parry and keep the pressure up on her afterwards.
