A lot will say Azazel but eh, don't forget that he has a hurtbox the size of a house. Once you get him into the air, you can land all sorts of juggles that simply are not possible on regular characters and he's easy enough to launch.

Jin in scenario campaign was also pretty annoying.(The only saving grace was this that you could use him as a baseball ball when you hit him with the pipe)
Just to note the boss in Tekken Tag Tournament 2 was Jun/Unknown. Quite tough but it's definitely one of my all-time favourite bosses. The stage is really pretty and ethereal, the music and stage transition is awesome too. I also have a soft spot for Jun... Jun for Tekken 8 plz
If we're going beyond arcade though I must mention the Nightmare Train T6 Scenario Stage. Aptly named, the stage was hard enough on its own but it ends with Devil Jin as a boss with a constant stream of enemies as well.
You had to had the right approach for nightmare train.
What I usually did was to leave the minigun alone, and focus on keeping Alisa alive until Devil Jin Arrives. Then when he comes pick up the minigun and shoot him off the train.
Hell, I'll even pay for it as DLC.
