I think it's because xiao-yu went to high school in japan with jin in the previous series, and she only spoke japanese there.

Feng doesn't speak much, but it's chinese.
Xiaoyu also went for years on a japanese school, thats why she speaks japanese.
Also Wang speaks chinese, but he isn't in the game.

theres no such language as 'chinese'
chinese is a race, not a language

chinese people, for the most part, speak mandarin.

OK, tell the State Council of the People's Republic of China that there's no such thing as "simplified Chinese" and "traditional Chinese". The dominant "traditional language" being Mandarin doesn't mean much.

Josie as said before speaks English instead of tagalog, Lars speaks Japanese instead of Swedish. Even though he most likely spent his younger years in Sweden before enlisting in the Tekken Force.

Also fun fact to notice. Eddy Gordo have spoken english until now (since TEKKEN 3) also Miguel spoke english in T6 and TTT2. but now they speak portugese and Spanish respectively...

So Swedish voice actor for Lars and a Philippines one for Josie in the next installment?

When people say Chinese they simply mean whatever the most popular language is there or whatever fits the region of the character (Which is often not even revealed) and it's easier to just ask for "Chinese" since that way you don't have to figure out which one of the several dialects X character would speak. This is getting into pedantic territory.
