Regardless, the Phone Guy in FNAF 3 sounds just like the former two games' ones.
In any case, your theory is valid for me, until we get the timeline right.
Also, Night 7 can't happen after Night 6. The day after that night is when The Bite of '87 happened, which closed the Pizzeria, so Night 7 definetly happened before that night. Since Phone Guy mentioned in that night that someone tampered with the animatronics, i think Fritz tampered with the animatronics (it's mentioned in the Pink Slip, plus, changing the A.I. of the animatronics is probably a metaphor showing that you are tampering with them) that night, then came the night before The Bite Of '87, then came The Bite itself. Fritz is either Purple Guy or some random person who decided to tamper with the animatronics for fun.
Here's the order of the FNAF 2 nights and events in my opinion:
Night 1 -> Night 2 -> Night 3 -> Night 4 -> Night 5 -> Night 7 -> Night 6 -> The Bite of '87
I think after Night 5, Purple Guy sneaked in the Pizzeria and stole the Fredbear suit, although the Pizzeria guards only found about that after Night 7, because after that night is when the animatronics started acting up. The CEO is probably the only one who knew about Purple Guy stealing Fredbear from the Pizzeria until the day after Night 7, which is why he put the building on lockdown. Purple Guy probably had access to the Pizzeria's storage rooms because he probably became a guard, but switched to the night shift after he stole Fredbear, which would explain why a day shift position became available and why Jeremy isn't the one working on the night shif in one of the nightst. Jeremy was probably on the day shift after Night 5, but since Fritz did a terrible job with the night shift, Jeremy had to be put back to the night shift.
He could be Mike Schmidt as well, since Schmidt and Smith sound similar, but there's not enough proof to confirm that (the "Mike killed all" in FNAF 2's trailer song doesn't count, the song used for that trailer existed for a long time, before FNAF came along, so "Mike killed all" could just be coincidence, although knowing Scott, maybe it's not).
Fritz wasn't fired for murder, it was for tampering with the animatronics A.I's, as you can do in Night 7, the same reason why you got fired in Fnaf 1
Also, if Jeremy didn't get fired, then that could mean that you play as Jeremy in Fnaf 3

Jeremy was most likely the victim of The Bite. Phone Guy tells him to stay close to the animatronics. He obviously wouldn't work again at Freddy Fazbear's, especially considering one of their animatronics bit off his frontal lobe. BTW, Jeremy or whoever is the victim is still alive, Phone Guy says people can live without a frontal lobe in FNAF 1.
No. After Night 6, The Bite of '87 took place and the restaurant was closed, then it was reopened and the FNAF 1 events took place. How would Phone Guy know about when The Bite of '87 would happen? He wanted to take the night shift on the night after Night 6, which never happened because the restaurant was closed thanks to The Bite of '87.
