Based on the mechanics' proportions, they look like pretty short people. I think it's safe to say they are shorter than average. 5ft seems reasonable.
If that exact height I mentioned before is indeed 5 blocks then this would give a nice round number of 1 foot per block.
Are you trying to recreate something from real life, to scale?
More examples:
The pallet, 6 inches tall
Traffic cone, 4 inches (11.8/3)
Mattress, 5 in. thick
Pillow, 4-6 inches
Now This does say some pretty weird stuff about the player, but there are a lot more item references than human ones.

Since the global consensus for a Standard Guage railway is 1,435 mm, (or 4 ft 8 1⁄2 in) I divided 1,435 by the Scrap Mechanic consensus for a Standard Guage railway, 7 blocks, to get 205 mm. Since 205 mm is about 8.07 inches, one block in Scrap Mechanic is 8.1 inches cubed. This checks out since the character is about six and a half blocks tall, the character is 52.65 inches tall, or about 4' 4".
TL;DR: 4 blocks is a meter long.
