Resolution Issue Settings [Update]
First, exit Ori game, then -
Goto your SteamLibrary\steamapps\common\OriDE.exe
Right click on the file, select properties
Select the Compatibility tab
Under Settings -> Click on 'Change high DPI settings'

Under High DPI scaling override ->

Check/tick 'Override high DPI scaling behaviour.'

Scaling performed by choose "Application".
Click OK , then click Apply.

Relaunch your Ori game.

Goto your settings and setup 1920 x 1080 or max settings your display support. Enjoy!

Thanks for the update!

Nevertheless I applied those settings and anything else I found on the internet so far but I'm still not able to change the f***** resolution :/

Any futher advice?

What is your current resolution settings on your desktop vs the Ori game?
Check that your monitor/laptop supports FHD resolution.

My desktop resolution is 1920x1080 and I try to play in 4k. Both graphics card and monitor support 4k.
Works fine with other games.

1. Could you try to apply your desktop to 4K instead? Then launch Ori and see if 4K settings appear?
2. Otherwise hold 'shift' when launching the game and you'll get a different graphic setting box that lets you change it to what you want.

Ok. Changing the desktop resolution did the job. But I'm still curious why this game in particular demands me to set the desktop res first and in-game thereafter. All the other games can change their res independently.

It's dependent on your desktop settings which is why you have to disable DPI.
