Mario maker is more of a single player experience where you can build levels, share levels and play other peoples levels. It is very much a solo activity.
Ultimate Chicken horse is a multiplayer game where you also build levels, but you build and compete alongside other players in real time. No one person has complete control of the level building, because everybody get's to participate. Some people have thought that Ultimate Chicken Horse multiplayer mode should be added to Mario Maker.
Currently there is not a single player Ultimate Chicken Horse experience, you have to play with friends locally, or find people to play with in the online beta.
