Also a capture with the good soul gem can fail if the monster rarity is high, it require to retry multiple time.
You can know if you can catch or not a monster with a soulgem by listening to the sound when the capture failed. If the sound is very acute, you cannot catch the monster with your soulgem and require a better gem.
What about that yellow bar that sometimes appaers when you damage a monster doesn't that help with capture?
If you don't care about spoilers, you can go to the monster guide in steam. In the monster guide, it tells you what kind of monsters there are , soul gem that you need to use, etc. ( it hasn't been updated so there are a few new monsters)
