How to kill the fish boss on the last stage?

I don't know what to do in the last stage he follows me and has a red plant like thing on his head. I've tried several attacks but It doesn't work.

Last stage? If he's following you, then you still have to run away. There are two stages where this is done, IIRC.

If you really mean the last stage, where you actually have to fight her -- note how she tries to slap you with that rope-like thing? You have to position yourself so this gets caught in the clamshells, which will make her vulnerable.
