You say the sprites are bad, but what else do you expect? 4K High Definition FFXV graphics? It's a remake of a 16 bit SNES game. Be realistic here.
But really, I've played the SNES version so many times, that I was interested to play a tweaked version with a different style. I guess I'm just open to it now, to spice up a game I've played so many times.

Those people who are complaining about this port, is probably because they begun playing, didn't found the game familiar to what they met on consoles, and then gave a bad review to it.
From my experience... People find the pettiest little thing to whine about and whine. There is NOTHING wrong with the Steam Final Fantasys.
Graphics? All these FF's are pixal games; it's VERY hard to downgrade.
Gameplay? Yep. Zuzu still kicked my ass in FF6. There's a Hard Mode for FF4. FF5 just ain't hard.
Music? I will never understand people's problem with this... I won't get started with it.
Specifically, Sprites. Seriously, don't ♥♥♥♥-talk the sprites. The ORIGINAL guy remade them. (For FF5 at least.)
tl:dr People whine about the port instead of enjoying the game even though the ports don't have any REAL problems.
And yet they managed to do so by using garbage mobile sprites that clearly do not belong and making the game more bright and cheerful which is in complete contrast with the originals
Considering a large part of Final Fantasy is the musical scores butchering or otherwise ruining the music people are expecting to hear is a great way to ruin the game. I mean if I'm in the opera scene and instead of playing the opera song it plays some chipper upbeat chocobo theme or some generic moody atmospheric tune when I'm expecting the specific song which was made for that specific scene is a great way to ruin the mood.
Well this isn't FF5, this is FF6 and even if the original guy worked on the sprites or not that doesn't change the fact that they are diametrically different from the theme and feel of the game.
tldr:People actually like their port jobs to be good, not butchering the game for some unknown reason.
