Yoshitaka Amano does those concept character designs. He almost notoriously also appears to have some sort of fetish for drawing blondes. Therefore, Lenna & Faris are both blonde, while because the game involves sprites, they had to give them some form of difference, and so Lenna has "pink" hair and Faris has "purple" hair. FFV also isn't exactly supposed to be all that serious, anyway. It's designed to be a light-hearted, bright/colourful, "weird" FF game. But this was already the case long ago, even with the original SNES version.
If anything, they're paying tribute to Amano AND the original in-game designs. Yes, it looks a little off-putting, but that's how they were designed.
Want some more behind the scenes info? It's the same with FFVI. Firstly, Amano's Terra is blonde, but because there were already plenty of blonde characters (Edgar, Sabin, Gau (Amano art had green hair, blonde in-game), Celes).. They opted for Terra to have green hair.
In the more recent sprite version (also designed by Kazuko Shibuya, like the original was..), Gau now has green hair like his art. Terra still green hair (because I imagine the Westerner purists from the SNES era would be more ragey about HER hair changing..), but now there's even mods that feature her sprite with the blonde.
It's a heavily distinct artistic style, and SE is merely paying homage/tribute to Amano's work. And it's featured on the disc covers for FFVII, FFVIII and FFIX's PlayStation individual discs..
