As for ragnarok. While it is certainly a powerful option for the endgame dungeon, there are better options with less terious ways of farming them so I wouldn't go out of my way of farming them. Dragon lance, dragon whisker, chicken knife/brave blade, man-eater, mutsunokami are all great for endgame.
and for your questions.
1. Yes there is only 1 thief knife in the game, and it has no impact on your actually steal rate, so don't bother with it.
2. Afaik no.
You dont need team with dual Ragnarocks to beat GBA+ content, but certanly that will be advantage.
P.S. How do you farm Neo-Ex? I never wen back there after I defeated him.
If you go back into the Rift after beating the game, the final battle (and the entire ending sequence...) can happen again, basically, they just never programmed anything else to happen in that final room, so the final battle's still there. So I just keep fighting it over and over and stealing a Ragnarok every time.
I didn't realize the Thief Knife had no effect on stealing rates I thought it was a watered-down Thief Glove in addition to randomly mugging when you attack (I never actually attacked with it, I just used the "steal" command while it and the thief glove were equipped.). I must have read an ill-informed wiki or something. I'll swap that out for something better.

The first is how FFV (SNES) works from inside. The second, while it is walktrough, Djibriel has deep knowledge on the game mechanics and is the best thing for FFVa. They both have few mistakes, but in general its 99.9% accurate.
