Are you sure they are extinct or was it just a bugged achievement popped up?

sometimes a freshly created world does not generate any type of animals or plants. the world generator needs a lot of work. including scripts for respawning a replenishable resource

Unless you're an admin/mod on the server, those animals are gone. I love the whole "eco system".

But, yeah. As 123 said, the servers are buggy and don't always spawn every plant and animal type.
