There are three parts you can hit on the tree, the main trunk, the branches at the top which are covered in leaves, then also the leaf 'blocks' themselves. If you are aiming at the later, all the leaves will get a bright green outline, usually you have to jump and swing or build up.
Edit: Yeah, lol, I thought the Rice thing was weird and I certainly never got Acorns that way, I presume it is there in error.
Unfortunately I am doing as you say I am hitting the leaves and not the branchs everyone on my current server is having the same issue. Perhaps it is a server issue and not a bug. Will have to ask around.
How old is the world out of interest? I think Acorns were the latest and third tree 'seed' to be added, just curious if perhaps it doesn't work with worlds/Oaks generated before the update that introduced them?
Edit: Can you get the Birch and Cedar seeds okay?#
Ediit: Have you tried having admin spawn in and plant a single acorn? Perhaps a new tree would yield it's nuts to you?
At the moment there are only 3 trees that do drop seeds; Oak, Cedar and Birch. I collected all three today.
Although Fir seeds currently show up in the skills section, the leaves appear to be untargatable still.
Going to wait for the admin to get online and ask him to spawn one and we will see if we can get one from that.
The only difference I can think of is that we are on a 2km map (144x144) rather thatn 0.5km(72x72).
I'm on a 200 x 200 block map so I don't think that would be the source of your issue.
Single Player world and to be fair, it is a big performance impact lol
I think if I went again I would go for somewhere between a 120x120 world to a 160x160 as it's much bigger than I really use or would really be needed by a community of 8-16 players.
