Some strange things going on
There are some "unnormal things" going on in this game, f. e. I have 25 Guests a day in my buffet-restaurant and have 6.500,- minus, after a few days I do have 50 Guests and 14.000,- minus! How can that happen? In billard room I have 5 billard and 5 snooker tables and 15!!! queue-stands, and they are complaining more stands! Thats not normal! The waiters in a "normal" Restaurant, like german or french, are always (mostly) using the longest way from restaurant to kitchen and back, and guests are complaining about "cold food"! Usual waiters in restaurants are using the shortest way to serve, not the longest! Also I need a lot of waiters to get no complains, like 4-5 waiters for a restaurant with 40 seats, that makes very high costs! It looks like the game is not very well planed!

In my new hotel I have 4 snooker and 4 billard tables and 50!!! queue-stands, and they are still complaining more queue-stands! Thats crazy!

Restaurant profit: Check your pricing maybe. If you sell level 10 ingredient and charge level 1 it's likely that you lose more money when more customers come.
* Also check if restaurant is included in hotel packages (if you add free meals into the package it will not count into restaurant revenue and it looks like you are losing money when looking at the restaurant's financial statement, though the revenue is reflected in the package price)

Pool cue: Known issue. You just have ignore them and move on. You could tweak with the placement of tables and cue stands but people will complain eventually. May have something to do with the algorithm of guests choosing a cue stand.

Cold food: Happens all the time. Adding servers also causes other problems (people more likely to bump into each other). They will almost always complain unless you switch to buffet. Probably some other bug with pathfinding etc.

Make the restaurant big enough to pack 6 servers and 2 captains. Hire employees with the most lower salary possible at the start (500 average salary) at game start and invest in training instead to increase service quality fast. This should stop complains there. I rarely have trouble with bumping stuff in my restaurants and they have 50k profit now. If you can afford it put an artist there and always deco your restaurant with the best stuff you can/also looks good to improve the room satisfaction rating. Now, also add price level and ingredient quality 5 each. As including the restaurant in the packs you can do so if its making a ridiculous amount of profit (mine is because its making 50k profit). This are my personal tips. (Remember the restaurant is one of the better sources of profit in any hotel so if it is making ridiculous profit you can pretty much make your guest rooms cheaper than normal per reservation). Restaurants, coffee shops, shops, health clubs, indoor swimming pools, business centers and bars are also amongst the best sources of revenue and outdoor swimmimg pools (those are the key and are so overpowered in hotel giant 2).
As for the cue stands, snooker and pool tables stuff just put an adequate number of them and then ignore the rest of the complain (as they always want more for some reason, likely broken AI).
Sorry for replying 2 years late to this thread but I hope you enjoy the game and find my advice helpful. Also buffet is faster but setting a menu will not make guests complain about your restaurant not having enough buffet bars, which they will too eventually (again likely due to broken AI).

I did some more testing in this couple of days. Same restaurants. 5 servers and 2 captains already did the job (I still got no complaints about the service). I also have more tips for you. You should aim to have at least 2 chefs and 2 washups in your restaurant kitchen (along with 2 refrigerators and 2 washing machines) to prevent the complain about the dirty dishes and the complain about the slow service. You should not need more than that. Also it is advised to calculate the number of servers/captains per restaurant space ratio (same for bars and coffee shops size/number of servers ratio). So if they complain about cold food or food not arriving hire one more and keep monitoring. If they no longer complain about your service then its fine to leave it as is. The impolite service complain will go away naturally if you hire staff that earns the minimum possible salary at the start and you invest in their training that is.
Do not be afraid to experiment with the advance a week feature. Remember this is a simulator game so you can just advance the game fast and do it without saving, check if you are doing things right by having a good price/costumer per day ratio and other features and if you get in the red you can always reload a previous save point and adjust to see if profit/loss improves or not.
Also I compiled all my hotels buildings and the annoying complains that will not go away no matter how much (adequate) stuff I give my guests so here goes.

Library: They may complain about not having enough library sets
Coffee Shop: They may complain about not having enough urinols in male restroom, not having enough toilets on both restrooms
Restaurant: They may complain about not having enough buffet bars (if set to buffet), not having enough urinols in male restroom, not having enough toilets on both restrooms
Bar: They may complain about not having enough dart boards, not having enough cue stands, not having enough snooker tables, not having enough pool tables, not having enough urinols in male restroom, not having enough toilets on both restrooms
Game Room: They may complain about not having enough dart boards
Billard Room: They may complain about not having enough cue stands, not having enough pool tables, not having enough snooker tables
Business Center: They may complain about not having enough meeting rooms
Health Club: They may cmplain about not having enough lockers, not having enough urinols in male restroom, not having enough toilets on both restrooms, not having enough exercise machines, massage beds, beauty treatment stuff, swiss showers, spa pools, soundweave massage chairs, sunbeds, sauna seats

Thank You very much! Most of the points, You described, I had also in my Hotels and I was very confused, because I didnt know, what I should do! So it was very helpfull for me to see, that the problems are "in the game" and are not self-made problems!

This is not you indeed. That is the broken AI. Its hilarious at times. Considering its a 2008 game (the original version) which means the AI has been programmed in 2008. I see AI all the time stuck in coffee shops, changing clothes in the middle of corridors, not sleeping, not knowing where the guest room door is located, outright dissapearing from the hotel (visitors only in this one), being stuck in outdoor facilities (mainly outdoor swimming pools), being stuck in hotel lobbies, bumping into each other, not knowing where an entrance for a open to the public facility is located, bags teleporting on check out and the list goes on...

I am glad I could help. Enjoy the game and the broken AI that can be hilarious at times :)
