Suggestion: instead of using the exact gaze point to determine latitude/longitude and thereby orientation, maybe try to constrain the screen horizontal angle to roughly match the headset eye axis, and adjust the longitude to match that?
Also agree on the problem at the zenith. Some approaches lerp from using local forward vector to using local down vector of the HMD when looking up, and forward to up vector when looking down, to determin which way is forward.
Tilt in the video player would be a nice feature too, and it may not be comfortable to have 180/360 video following your head, so it could still be nice to just have a manual tilt control somewhere.
Really, this shouldn't be your responsibility tbh. This should be something at the OS level of wmr. But the chances of ms listening to users is probably the biggest longshot.
