Report a translation problem
I've never changed servers, but I just blocked access to EU Central servers on my PC to see what would happen and rebooted my game. I saw "ping checks" to the below listed domains as the game was loading. The ping check for EU Central failed as I'd blocked access, so I was placed on EU West instead.

I haven't really tested it further than what I mentioned above, but I believe that blocking one or more of these will achieve what you want.
by typing
0.0.0.0 gamelift-ping.eu-central-1.api.aws
0.0.0.0 gamelift.eu-central-1.amazonaws.com
into the host files but seems to not work for me :/
Acrylic DNS is an open source, portable program - no installation required. Any DNS proxy will work.
gamelift.eu-central-1.amazonaws.com seems to be connecting to the below IP addresses. Could you try blocking them and see if this has any affect? The only caveat here (if it works) is that if/when the IP addresses for "gamelift.eu-central-1.amazonaws.com" change, the "EU Central" server will no longer be blocked. You can find out which IP addresses a domain is connected to via an online DNS record search of the domain itself (gamelift.eu-central-1.amazonaws.com).

I'm a bit pressed for time at the moment, so I'm not really able to do much testing myself, but the DNS proxy method will definitely work.
I should also probably thank you as I'll now be blocking EU central myself going forward. I had no idea this was possible.
I am the author of original guide, but this guide with acrylic is retired - it doesn't work anymore. Find me in discord or dm me here to get new method.
I hadn't tried. Though, a DNS proxy should work. I imagine something as simple as OpenDNS would do the job, but again, I haven't done much testing.
Personally, I use Portmaster by "Safing", a free and open-source firewall of sorts which blocks ads, tracking and anything else you like at the OS level. It's as simple as typing *eu-central* and it's blocked. I'd recommend anyone with even a little technical know-how use this program, though it does have a bit of a learning curve.
I'm not sure why, to help others, you wouldn't just type the "new method" here to help OP out rather than ask them to use Discord or DM you. Gatekeeping knowledge that can potentially help others doesn't really make much sense.
Try it out its pretty easy to use and understandable!
