Well cross-progression SHOULD work between Epic and Steam.
In otherwords any progression you've made on Steam should transfer onto Epic Store too.
Otherwise yes, now that you've linked your account ANY new platforms you add will all progress you have on both Steam and Epic. (When they come.)

I.E: Did you keep ALL cosmetics, DLCs, etc.
I'm aware Auric cells won't transfer since it's mentioned on the FAQ and that you won't keep the Epic store exclusive onto Steam's.
You are not refunded if you purchased multiple DLCs on different platforms.
So you'll only own one Demo and won't get any benefit for multiple.
