Ok well the folders are hidden by default so you need to change your folder options to allow you to see hidden files & folders.
I don't have that version to figure out where the files are exactly but I would start by doing that, here are some screenshots to show you

Then check that location that the other guy mentioned to see if you can see them and edit them now

On the steam version, and I have to assume the same thing goes for the M$ store version, you have to disable smoothframes because that's what is limiting FPS to 62. By default the "fps cap" is set to 0 which is unlimited and you can't just change the 0 to a number higher than 62 and expect it to work because with smoothframes enabled it won't allow over 62 which is why you need to disable it.

Maybe they're considered "protected operating system files"? Do you have it so you can view those?
Or maybe they moved them into the same location as the actual game files in the WindowsApps folder? Though getting into those is a little harder but here is a how-to:
