Well i appreciate your comment, and i also understand that, but it was also so people in ze future perhaps, will see it :).
So, for example, if you never sell anything, your gold will remain constant. Checking for data with that value (say, 20 gold) over a few minutes should narrow the number of possible entries down to two or three, and by that point you can pretty much just try to edit them all until you find the correct one.
The same could probably be done with KP, but I would strongly suggest not doing so when you have (close to) KP, as a lot of the data might be in such a state for a very long time (and as such finding the KP value might be hard).
TL;DR You can check a data table for chaning data values inside cheat engine to find the data you're looking for.
The narrowing down in cheat engine doesnt work for Shoppe Keep.
Or are you saying that the values aren't stored as the value that is printed?
(I could be wrong on multiple points. As I stated, I haven't used Cheat Engine for several years)

Other than that, I can't help you. I am not an expert on Cheat Engine in any way. Their forums might be able to give you some insight as to what the issue might be.
