Sinker visual representation
Not sure why it was ever done this way, maybe its just me/my area but having the sinker on a tied off separate piece of line is just super whack and would not be secured or anything, youd lose your bait from it tangling on itself and swinging n hitting it.
Least in Aus we secure the sinker on the line itself then theres a bit of lead to the hook/bait.

I've tried searching, but still not seen it used the way it does in-game.
Seen one where sinker on end, hook is further up.
Then few others of slight variations (only because shape of sinker is one that hangs on the line instead of being threaded by the line)
But still none that are on end of a piece of line that's then attached to the main line like that.

You get 2 different methods of bottom fishing. One method is Specimen Carp Angling, which is similar to the image you posted. (https://fishcare.org.au/wp-content/uploads/2017/11/Running-Sinker1.png), this type of angling, you focus more on stealthy fishing, with Popups, Tigernuts, Herrick Traces etc.

The other method is called "Pap Gooi" in South Africa (Direct Translation: Porridge Throw), and this is basically with the sinker on a separate piece of line for example: https://sacarpfishing.yolasite.com/resources/t_vaaldam.gif - This method is more for the casual angler.

That's second one still is not what's used in the game tho lol. The pic you put isn't even using a sinker at all but you could argue is similar to https://www.go-saltwater-fishing.com/images/xpaternoster.gif.pagespeed.ic.WOV25SEfrU.png which would be using a sinker then hooks above it, like i mentioned above, the depiction in game is the hook being further down or on longer piece, than the sinker, but sinker still off on its own piece which is just whack and from what I've ever witnessed, or seen (even online at this point) is not used as a method lol.

End of the day, its not game changing, its just a visual thing that irks me a bit when I see it, as it just doesn't make any practical sense at all.

Yeah had a bigger chat with a friend who works on charters around aus's coastline, they use these kinds of setups in strong currents, and sometimes sea fishing but that's about it.

Pretty much all these are used fishing for trout/salmon in rivers where I am in Canada.
